The cooking class will start in a traditional riad in the medina. We have opted for a riad because we want our guests to have a full experience by walking through the medina and easily get to the market that locals go to for their every day life. Basically, we want you to be and act like a local. Our local Akaltours chef Fatima will welcome you to her Salon and will first give you instructions on how to prepare for the cooking class. Get your hands washed and your notes to write down the necessary information.
The introduction will be about your choice of the preferred dish, whether a Tagine with its different types or couscous or even the pastilla, its up to you to choose which dish. After choosing, your chef will write down the ingredients for you to to the market to purchase them. The experience is getting exciting more at the market where you and your local guide try to buy vegetables using Moroccan words such as BCHHAL for how much or ARA NAABAR for give me the basket to throw vegetables into…. Our local guide will be the mediator and will allow room for spontaneity and conversation with you and the vendors. This will be the best authentic experience you have ever had. After that, you can go to the spice market to buy the spices and then go to the olive market to get some olives for your tagine.
Back to your riad with Chef Fatima, who will start cleaning the vegetables and guide you through each step. As you cook, you will learn about the significance of these dishes in the Moroccan society. During the class Fatima will give you more insights into the Moroccan cuisine and the culture of gathering around one meal.
After preparing the dish, you can also prepare a desert like orange with cinnamon before preparing the setting for your dish prepared by yourselves. Savor your dish with Moroccan cookies and pastries.
